Chicken tacos with Tequila Mango Salsa! Its not a good tuesday unless there are Tacos! Todays Taco Tuesday Recipe is my Chicken Tacos with a Tequila Mango Salsa! In honor of summer I am not only going to provide you all with your Freebie Tuesday Posts but I am also going to have Taco Tuesdays every other week! (hopefully my family wont get tired of tacos!) We are starting this tuesday off with a bang as it is mango week! Nothings better then fresh mangos, spicy peppers, and juicy chicken on a corn tortilla. I recommend making the salsa ahead of time so you can spend your day lounging in the sun rather than working in the kitchen! Ingredients: Chicken Marinade ¼ cup mango salsa 3 tablespoons of orange juice 2 tablespoons of tequila Mango Salsa 1 ½ mangos 1 jalapeno (or green bell pepper) 1 Red bell Pepper 2 tablespoons of Tequila 2 tablespoons of orange juice ½ tablespoon of lemon juice (or one squeezed lemon) Prep Time: 30 minutes (plus marinating time) Cook Time: 15-20 minutes Instructions: Mango Salsa 1. As for the peppers it’s the same idea of dicing them into small cubes so they can easily mix with the salsa. Be VERY careful with how much jalapeno you put into your salsa, if you do not like spicy food use a green bell pepper instead. Also to avoid extra heat make sure you remove all the seeds. When you have all of your peppers and mangos diced place them into a bowl, add two tablespoons of tequila as well as 2 tablespoons of orange juice, and ½ tablespoon of lemon juice, stir with a spoon then wrap with plastic wrap until needed. Add your raw chicken, ¼ cup of your mango salsa, 3 tablespoons of orange juice, and 2 tablespoons of tequila. Let marinade for as long as you want.
