Eggnog Spice Muffins

My exploration of eggnog continues with this delicious festive muffin. The rich aromatic flavors of eggnog, nutmeg and cloves find themselves dancing on your taste buds. You will surely feel the need to reach for another one as soon as you finish your first!

Eggnog Spice Muffins
Prep time: 10 minutes
Cook time: 15-20 minutes
Yields: 20 muffins


  • 2 ½ cups of Flour
  • 1 cup brown sugar
  • ½ cup sugar
  • ¼ teaspoon ground cloves
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ tablespoon vanilla
  • 1 cup canola Oil
  • 1 cup eggnog
  • 3 eggs


  • ½ teaspoon cinnamon
  • 1 ½ cup powdered sugar
  • 3 tablespoons Eggnog
  • Tools:
  • Muffin tin
  • Oven
  • Spatula
  • Whisks
  • Mixing bowl


    1.  Preheat oven to 375 degrees F
    2. First begin by adding your flour, sugars, cloves, cinnamon, nutmeg, baking powder, baking soda, and salt into a medium sized bowl. Mix the ingredients until they are fully incorporated.
    3. Now combine your wet ingredients in a separate bowl, mix thoroughly.
    4. Once your wet ingredients are mixed, gradually start adding your dry ingredients mixing along the way.
    5. When dry ingredients fully mixed, prep your muffin tin by greasing it or laying down cupcake liners.
    6. Fill cupcake tins till it has 1 cm from top of batter to top of pan.
    7. Place cupcake tins into the oven, set timer for 12-20 minutes. Cook until you are able to insert a toothpick and pull it out without having any batter on it.

Remove from oven, let cool for five minutes then transfer to cooling rack.

Once completely cooled down whisk glaze ingredients and then brush onto top of muffins.
